Standing Rib Roast of Beef

Ingredients

1 oven ready rib roast of beef (4 or 5 bones; 4.5 to 5.5 lbs)
1/4 cup olive oil
1/4 cup coarsely ground black pepper
3 tablespoons coarse salt
2 tablespoons chopped fresh garlic
3 tablespoons dry thyme
3 tablespoons dry rosemary

Cooking Instructions

1. Preheat oven to 425°.
2. Brush meat with olive oil. Combine all seasonings in small bowl.
3. Rub the seasoning paste uniformly over meat.
4. Place meat, bone side down, in a roasting pan, and roast for 20 min.
5. At the end of 20 min, reduce oven temperature to 350 degrees and continue cooking for 1 1/2 to 2 hr. for med rare (internal temp 130°).
6. While the beef is cooking, carefully pour off the fat that has accumulated in the roasting pan into a heat proof container.
7. Remove roast from oven and allow stand for 20 min before carving.
8. Cut, lay roast bone side down.
Also, place small chunks of garlic into random places into the meat before cooking.
