Spinach Balls

Ingredients

2 10 oz. boxes frozen spinach, thawed, chopped, and drained well.
2½ cups Italian style seasoned bread crumbs
1 stick of butter
1 small onion, finely chopped
3 cloves garlic, minced
½ tsp. ground thyme
1 Tbsp. hot sauce (Franks)
4 eggs, beaten
¼ tsp. black pepper
¾ cup (3 oz) grated Parmesan and Romano cheese. Extra used in rolling balls.

Cooking Instructions

1. Drain thawed chopped spinach well. Use hands to squeeze out water.
2. Melt butter in small sauce pan.
3. Add chopped onion and minced garlic to butter. Heat until onion and garlic are clear.
4. Combine all ingredients in a large bowl until well mixed.
5. Shape into 1 inch balls. Roll in extra grated cheese and place on parchment paper on cookie sheet.
6. Chill in refrigerator for 2 hours.
7. Bake at 350 degrees for 20-25 minutes until lightly browned.
8. Serve warm
