Apple Noodle Kugel

Ingredients
For Kugel
12oz fine egg noodles
1/4 cup oil
6 red apples, peeled
6 eggs
3/4 cup sugar
1-1/2 tsp cinnamon
1-1/2 tsp Kosher salt or 3/4 tsp table salt
For Topping
1/2 cup cornflake crumbs
1 /2 cup sugar
1-1/2 tsp cinnamon
Cooking Instructions
Cook and drain the noodles. Add to large bowl
Mix in the oil
Grate apples ad squeeze gently to drain the liquid. Put into separate bowl
Add eggs, sugar, cinnamon and salt to apple mixture
Add apple mixture to noodles . Stir to combine
Pour mixture into greased 9 x 13 baking pan or round spring form pan
Mix the crumb topping in a small bowl and sprinkle over kugel
Bake covered for 50 minutes. Place sheet pan under baking pan in case it spills over
Bake uncovered for another 10 minutes
Remove from oven and let kugel cool completely before covering to prevent topping from getting soggy
Serve warm or at room temperature
