Crush matzah in large bowl. Soak in hor water for 15 seconds. Drain excess water.
In separate bowl, combine bananas, eggs, vanilla, cinnamon and salt.
Add egg and banana mixture to matzah in large bowl. Stir to combine.
Melt about 1 Tbs. of butter for each "pancake" in small pan. Use 1/2 cup measure for each "pancake". Flatten with spatula and fry until golden brown on each side, about 3-5 minutes.
Repeat with remaining batter.
Top with cinnamon sugar, walnuts, bananas and
Maple syrup.
Total time: 20 minutes
Yield : 20 pancakes
