Klatzkin Chili

Ingredients

½ sweet onion, chopped
2-3 garlic cloves, minced
1 Tbs vegetable oil
1½ lbs. ground turkey or 1½ lbs. beef stew cubes, cut into ½ cubes
½ tsp freshly ground black pepper
1 Tbs ground cumin
2 Tbs hot Mexican chili powder (ingredients: chili pepper, cumin, oregano, salt)
1 (15 oz) can tomato sauce
1 (10 oz) can “Ro-tel Chili Fixins” (seasoned diced tomatoes and green chilis)
1 (14 oz) can diced tomatoes (with basic, garlic, and oregano)
1 Tbs dried oregano
2 tsp liquid hot pepper sauce (Franks)
3 stalks celery, chopped
1 (15.5 oz) can kidney beans (do not drain)
1 (15.5 oz) can pinto (or white) beans (slightly drained)
¼ cup water

Cooking Instructions

1. In a Dutch oven, saute the onions and garlic in the oil until soft. Add the beef/turkey and cook until slightly browned, stirring often.
2. Add the pepper, oregano, cumin, and Mexican chili powder to the meat, stirring until fully browned.
3. Add tomato sauce and rinse can with ¼ cup water adding to pot.
4. Add Ro-tel chili Fixins and diced tomatoes.
5. Add chopped celery and hot pepper sauce.
6. Cover and allow to simmer for 30 mins., stirring often.
7. Add kidney and pinto beans.
8. Cover and allow to simmer for at least 1 hour, stirring occasionally.
9. Before serving, test spice level. Add hot sauce and/or Mexican chili powder to taste.
