M&D Pizza (thick crust)

Ingredients

1-1/4 Cup water
½ tsp sugar
2 pkgs Rapid Rise Pizza Yeast
3-1/2 Cup bread flour
3 Tbsp extra virgin olive oil plus more for greasing large bowl
½ tsp salt

Cooking Instructions

  1. 1-1/4 C water into 2 C Measuring cup.  Warm 50 seconds on High in microwave
  2. Add ½ tsp sugar and stir in.  Add 2 envelopes yeast to water.  Stir.   Cover with plastic wrap and allow to “rest” for 10 minutes.
  3. Meanwhile, measure 3 C bread flour (spooned into measuring cup) into large bowl.  Add ½ tsp salt to flour and mix in.  Make a well in center.
  4. When yeast is ready, bubbly and “bloomed”, add 3 T of warmed (barely) olive oil.  If olive oil is too hot, it will kill the yeast.
  5. Add yeast mixture to “well” in center of flour.  Sir with wooden spoon until a shaggy dough begins to form.
  6. Turn out dough onto floured work surface.  Knead in ¼ C flour a little at a time.  Add up to another ¼ C, 1 T at a time, if needed.  Knead for 10 -15 minutes.
  7. Dough should be sticky but solid.
  8. Grease the large bowl with olive oil.  Place dough inside bowl and turn to coat Press down slightly.  Cover with clean towel or plastic wrap.  Allow to rise  10 minutes in warm place.
  9. Meanwhile, lower oven rack to 3rd position from bottom.  Warm oven slightly (about 115 degrees) and turn off.
  10. Gease a 11” x 17” heavy cookie sheet.
  11. Prepare pizza sauce and other toppings.  (See M&D pizza)
  12. When dough is ready (springy when poked) turn out on to prepared sheet.  Stretch & press to fit pan.  Cover with the towel, and place in prewarmed oven with door slightly ajar.  Allow to rise about 20 minutes.
  13. Remove pan from oven and preheat to 450 degrees.
  14. Add sauce, shredded mozzarella cheese and other toppings as desired.  Sprinkle lightly with olive oil and bake at 450 degrees for 12 minutes or until done as desired.
  15. Sprinkle oregano on top.  Cut and enjoy!
