Matzo Ball Soup (Manischewitz style)

Ingredients

Matzo Balls
2 eggs
2 tablespoons vegetable oil
1 Manischewitz packet
2 oz seltzer

Soup
1 1/2 qts of water
1 qt chicken broth
1 Manischewitz packet
3 large carrots, peeled and cut into slices
2 stalks celery, chopped
1 cooked chicken breast (or equivalent) chopped or shredded

Cooking Instructions

Matzo Balls
1. Mix in a bowl, 2 eggs, vegetable oil, and seltzer.
2. Add contents of matzo ball packet (packet No. 1) and stir with a fork until evenly mixed.
3. Chill in refrigerator for about 15 minutes.
4. Moisten hands and form into balls; size is up to you.

Soup
1. Add soup mix (packet No. 2) and 6 cups water (1 1/2 quarts) and 1 quart chicken broth to pot.
2. Bring to a brisk boil.
3. Add carrots
4. Add cooked chicken
5. Drop matzo balls into pot of boiling water. Cover tightly and simmer until thoroughly cooked, about 30-40 minutes
