Crush matzah in large bowl. Soak in hor water for 15 seconds. Drain excess water.<br />
In separate bowl, combine bananas, eggs, vanilla, cinnamon and salt.<br />
Add egg and banana mixture to matzah in large bowl. Stir to combine.<br />
Melt about 1 Tbs. of butter for each "pancake" in small pan. Use 1/2 cup measure for each "pancake". Flatten with spatula and fry until golden brown on each side, about 3-5 minutes. <br />
Repeat with remaining batter.<br />
Top with cinnamon sugar, walnuts, bananas and<br />
Maple syrup. <br />
