Ingredients

10 sheets matzah<br />
Hot water<br />
3 over ripe bananas, mashed <br />
2 eggs<br />
1 tsp vanilla <br />
1 tsp cinnamon <br />
Pinch of salt <br />
1 stick of butter for cooking

Cooking Instructions

Crush matzah in large bowl. Soak in hor water for 15 seconds. Drain excess water.<br />
In separate bowl, combine bananas, eggs, vanilla, cinnamon and salt.<br />
Add egg and banana mixture to matzah in large bowl. Stir to combine.<br />
Melt about 1 Tbs. of butter for each &quot;pancake&quot; in small pan. Use 1/2 cup measure for each &quot;pancake&quot;. Flatten with spatula and fry until golden brown on each side, about 3-5 minutes. <br />
Repeat with remaining batter.<br />
Top with cinnamon sugar, walnuts, bananas and<br />
Maple syrup. <br />
