Ingredients
½ sweet onion, chopped<br />
2-3 garlic cloves, minced<br />
1 Tbs vegetable oil<br />
1½ lbs. ground turkey or 1½ lbs. beef stew cubes, cut into ½ cubes<br />
½ tsp freshly ground black pepper<br />
1 Tbs ground cumin<br />
2 Tbs hot Mexican chili powder (ingredients: chili pepper, cumin, oregano, salt)<br />
1 (15 oz) can tomato sauce<br />
1 (10 oz) can “Ro-tel Chili Fixins” (seasoned diced tomatoes and green chilis)<br />
1 (14 oz) can diced tomatoes (with basic, garlic, and oregano)<br />
1 Tbs dried oregano<br />
2 tsp liquid hot pepper sauce (Franks)<br />
3 stalks celery, chopped<br />
1 (15.5 oz) can kidney beans (do not drain)<br />
1 (15.5 oz) can pinto (or white) beans (slightly drained)<br />
¼ cup water
Cooking Instructions
1. In a Dutch oven, saute the onions and garlic in the oil until soft. Add the beef/turkey and cook until slightly browned, stirring often. <br />
2. Add the pepper, oregano, cumin, and Mexican chili powder to the meat, stirring until fully browned.<br />
3. Add tomato sauce and rinse can with ¼ cup water adding to pot.<br />
4. Add Ro-tel chili Fixins and diced tomatoes.<br />
5. Add chopped celery and hot pepper sauce.<br />
6. Cover and allow to simmer for 30 mins., stirring often.<br />
7. Add kidney and pinto beans.<br />
8. Cover and allow to simmer for at least 1 hour, stirring occasionally.<br />
9. Before serving, test spice level. Add hot sauce and/or Mexican chili powder to taste.
