½ tsp sugar
2 pkgs Rapid Rise Pizza Yeast
3-1/2 Cup bread flour
3 Tbsp extra virgin olive oil plus more for greasing large bowl
½ tsp salt

Cooking Instructions

<p class="MsoNormal"><ol><li><span style="font-size:12.0pt;line-height:107%">1-1/4 C
water into 2 C Measuring cup.&nbsp; Warm 50
seconds on High in microwave</span></li><li><span style="font-size:12.0pt;line-height:107%">
Add ½ tsp sugar and stir in.&nbsp; Add 2
envelopes yeast to water.&nbsp; Stir. &nbsp;&nbsp;Cover
with plastic wrap and allow to “rest” for 10 minutes.</span></li><li><span style="font-size:12.0pt;line-height:107%">Meanwhile,
measure 3 C bread flour (spooned into measuring cup) into large bowl.&nbsp; Add ½ tsp salt to flour and mix in.&nbsp; Make a well in center.</span></li><li><span style="font-size:12.0pt;line-height:107%">When yeast
is ready, bubbly and “bloomed”, add 3 T of warmed (barely) olive oil.&nbsp; <i><b>If olive oil is too hot, it will kill the
yeast.</b></i></span></li><li><span style="font-size:12.0pt;line-height:107%">
Add yeast mixture to “well” in center of flour.&nbsp;
Sir with wooden spoon until a shaggy dough begins to form.</span></li><li><span style="font-size:12.0pt;line-height:107%">Turn out dough
onto floured work surface.&nbsp; Knead in ¼ C
flour a little at a time.&nbsp; Add up to
another ¼ C, 1 T at a time, if needed.&nbsp;
Knead for 10 -15 minutes.</span></li><li><span style="font-size:12.0pt;line-height:107%">
Dough should be sticky but solid.</span></li><li><span style="font-size:12.0pt;line-height:107%">
Grease the large bowl with olive oil.&nbsp;

lower oven rack to 3<sup>rd</sup> position from bottom.&nbsp; Warm oven slightly (about 115 degrees) and

x 17” heavy cookie sheet.</span></li><li><span style="font-size:12.0pt;line-height:107%">Prepare
pizza sauce and other toppings.&nbsp; (See M&amp;D pizza)</span></li><li><span style="font-size:12.0pt;line-height:107%">When dough
is ready (springy when poked) turn out on to prepared sheet.&nbsp; Stretch &amp; press to fit pan.&nbsp; Cover with the towel, and place in prewarmed
oven with door slightly ajar.&nbsp; Allow to
rise about 20 minutes.</span></li><li><span style="font-size:12.0pt;line-height:107%">Remove pan
from oven and preheat to 450 degrees.</span></li><li><span style="font-size:12.0pt;line-height:107%">Add sauce,
shredded mozzarella cheese and other toppings as desired.&nbsp; Sprinkle lightly with olive oil and bake at
450 degrees for 12 minutes or until done as desired.</span></li><li><span style="font-size:12.0pt;line-height:107%">Sprinkle
oregano on top.&nbsp; Cut and enjoy!</span></li></ol></p><p>
